Spiced Coffee Cake
Ingredients:
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup canned pumpkin purée
- 1/4 cup honey
- 1/4 cup pure maple syrup
- 1/4 cup ghee or coconut oil
- 2 eggs
- 1/3 teaspoon salt
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 tablespoon cinnamon
- 2 teaspoons vanilla extract
- 5 drops dōTERRA ginger essential oil
- 1/4 teaspoon all spice
- 1/8 teaspoon nutmeg
Topping
- 1/2 cup rolled oats
- 1/8 cup pure maple syrup
- 1 tablespoon ghee or coconut oil, melted
- 1 teaspoon cinnamon
- 2 tablespoons raisins
- 1/4 cup chopped pecans
- Pinch of salt
Directions:
Combine all cake ingredients in a blender. Place in a 9 x 9 pan that has been sprayed with cooking spray.
Next, place all topping ingredients in a bowl and stir to combine. Place on cake layer and spread evenly.
Bake on 350 degrees for 30 – 40 minutes or until a toothpick comes out clean. Slice and serve warm with a cup of Joe!
