Garlic and Herb Salmon

Ingredients:

  • 4 salmon filets (skin on preferably)
  • 1 large clove or 2 medium cloves garlic grated
  • 5 drops doTERRA lemon essential oil or the zest of 1 lemon
  • 2 tsp fresh thyme or 3/4 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • Cooking spray

Directions:

Preheat oven to broil. Spray a cast iron skillet with cooking spray and place the salmon fillets skin side down in skillet. Next in a small bowl, mix all other ingredients. Brush mixture evenly onto each salmon fillet. Let sit for up to 15 minutes if you have time. Place skillet over medium heat and cook 3-5 minutes or until you see bottom of salmon begin to turn light pink. Transfer to oven and cook for 3-5 minutes or until just cooked through. Watch closely as this will cook quickly and could burn. Remove skin and serve warm!
