Simple BBQ Chicken

Ingredients:

  • 1 whole chicken cut into pieces (alternatively use the all white or dark meat, whatever you prefer)
  • 2 tbsp olive or avocado oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1 tbsp. smoked paprika (can substitute chili powder)
  • 2 tsp cumin
  • 2 tsp coriander
  • Favorite BBQ sauce or make your own. (I love @primalkitchen)

Directions:

In a ziplock plastic bag, combine all ingredients except chicken and BBQ sauce. Once combined, add chicken and coat thoroughly to combine.  Let marinate for up to 24 hours. When ready to cook, let sit at room temp for about an hour if possible. This will ensure a more even cooking.

Preheat grill to medium – high. Cook chicken over medium heat until chicken is done (internal temp of 165 degrees). After turning the chicken once, begin to baste with BBQ sauce. Continue to grill, turning and basting a few times  until the chicken becomes caramelized on the outside. Enjoy!
