Balsamic Grilled Chicken and Veggies

Ingredients:

  • 1⁄4 cup olive oil  
  • 1⁄4 cup balsamic vinegar  
  • 2 teaspoon dried oregano  
  • 2 teaspoon dried thyme  
  • 1 1⁄2 teaspoon garlic powder   (or 3 cloves minced garlic)
  • 1 1⁄2 teaspoon sea salt  
  • 4 large chicken breasts  
  • 2 small zucchini squash   (sliced lengthwise)
  • 1 bunch asparagus  
  • 1 tablespoon Dijon mustard

Directions:

Add ingredients for marinade (everything except chicken and veggies) into a jar with a lid and shake until combined.

Place chicken in a zip lock or bowl, add 1/2 marinade, and set in fridge for minimum of 30 minutes up to 12 hours

Cut zucchini in strips (approximately 1/4-1/2 inch thick) lengthwise. Cut woody stems off asparagus

Place veggies in a zip lock or bowl, add other 1/2 marinade, and set in fridge for minimum of 30 minutes up to 12 hours

Heat grill or grill pan over medium heat. Once hot, cook chicken breast and sliced veggies until done. Chicken will cook for about 8-10 minutes on each side until there is no pink on the inside. Veggies cook for about 4 minutes on each side.
