Blackened Salmon

Ingredients:

  • 4 salmon fillets (wild caught salmon is best)
  • 3 tbsp. brown sugar or coconut sugar (OMIT for WHOLE30)
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • 1 tbsp. smoked paprika (can substitute chili powder)
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp. coconut oil or olive oil

Directions:

Preheat oven to 425 degrees. Combine all ingredients (except salmon and oil) into a bowl and mix to combine.  Heat a cast iron or non-stick skillet (make sure it is oven safe) over medium-high heat and add 2 tbsp. oil. Pat salmon fillets dry and sprinkle a generous amount of seasoning onto each filet. Then, rub spices into salmon to coat completely on both sides. You can do this earlier in the day and leave salmon in the refrigerator if you like. Next. cook salmon on one side in the skillet for approximately 2 minutes.  Flip salmon and transfer immediately to the oven.  Cook for 5-7 minutes or until just pink in the center and remove. Enjoy!
