No Fuss Salmon Cakes
- 2 cans salmon (preferably wild caught), flaked
- 2 baked sweet potatoes, mashed
- ½ cup almond flour
- 2 scallions- chopped
- 1 egg
- 1 tsp dill (dried or fresh)
- ½ tsp salt, ¼ tsp pepper
Mash all ingredients together and incorporate well. Form into patties by placing ⅓ cup mixture in hand and patting out.
Bake on a parchment lined baking sheet for 20 min on 400 degrees, then flip and cook 10 min more until golden brown. I love to top them with mashed avocado or mayo with a drizzle of sriracha on top! Enjoy!!
