Oven Roasted Veggies
Ingredients:
- 2 bags mixed veggies such as broccoli, cauliflower, carrots
- sprinkle with salt, pepper, and a olive oil
Directions:
Preheat the oven to 400 degrees. Line a sheet tray with aluminum foil or parchment paper. Place veggies on tray. Drizzle with olive oil and sprinkle with S & P.
Place in oven for approximately 30 minutes or until tender and brown around the edges.
Use same technique for any roasted veggies. Cooking times will vary based on which veggies you choose. For example, asparagus, zucchini, squash will cook less than carrots, broccoli, and cauliflower.
